Ichinokura, a traditional handmade sake brewery in Miyagi, makes Suzune ('chiming bells'), one of Japan's most celebrated sparkling sakes, with delicate silky bubbles from bottle secondary fermentation using rice only. The same brewery pioneered low-alcohol sake with Himezen (8% ABV). Suzune is distributed in the US via True Sake and other retailers, and in the UK via London Sake, and has medaled at the International Wine Challenge.
