Iio Jozo, a 120+-year vinegar house on the Sea of Japan in Miyazu, controls the full cycle: the Iio family grows its own rice, brews its own sake, then makes vinegar. Standard Fujisu uses 200g of rice per liter (five times the legal minimum) and the Premium version 320g/L, yielding an exceptionally mellow, deeply flavored rice vinegar favored by Michelin chefs. They also make brown-rice (genmaisu) and black (kurozu) vinegars. Distributed widely in the US/EU.
