Maruya, one of two historic Hatcho miso houses in Okazaki, traces roots to 1337 and exports its miso to roughly 20 countries. Hatcho is a pure soybean (mame) miso made with no grains, packed into large cedar barrels weighted with pyramids of river stones and aged over two years for an intense, low-sweetness umami. Since the 1980s Maruya has used organic soybeans. Available in the US/EU through gourmet and natural-food channels including powder form.
