Terada Honke (founded 1673) in Kozaki, Chiba brews natural sake from its own organically grown rice, using the kimoto method and ambient micro-organisms, with some lines fermented in wooden kioke. 'Gonin Musume' ('Five Daughters') was the brewery's first natural organic sake, created in 1985 by the 23rd-generation president. It is a living, lactic, food-forward junmai prized by the natural-wine and biodynamic trade. It is distributed in the US through specialty importers and is a benchmark organic-natural sake export brand.
