Toko Ginjo Umeshu by Kojima Sohonten (founded 1597) is a triple-crown award-winning plum liqueur made the kasutori way: the brewery first distills a ginjo shochu from junmai ginjo sake lees, then steeps green ume plums and rock sugar. The result is a refined, sake-lees-based umeshu distinct from neutral-spirit versions. It is exported alongside Toko sake to the US, UK and EU. Manaka Sake distributes in Europe.
