Uchibori is Japan's second-largest vinegar company, family-run in Gifu since 1876, with its own 'Oak's Heart' shops in Takashimaya depachika. Its Rinkosan kurozu uses twice the brown rice of standard rice vinegar for a richer aroma, fuller body and mellow, balanced umami unique to premium Japanese black vinegar.
