Yaesen Shuzo (founded 1955) on Ishigaki Island produces awamori via atmospheric and vacuum distillation. Its Taru-Chozo is a barrel-aged (kusu) awamori with a mellow, woody character, exported and sold via European specialty retailers such as Ginza Berlin. Awamori uses Thai indica rice and black koji and is a protected Okinawan GI category. It is a growing premium awamori export brand.
